Italian Sausage Potato Soup!

Ok, y’all. This is one of my absolute favorite soups to make!

And, there’s kale in it. You know kale is all the rage these days. You can brag to your friends and even call this Italian Sausage Potato Kale Soup. They’ll probably be begging for the recipe. And, you’ll be super cool. You little trend setter!

1 lb Italian turkey sausage (ground or chopped links both work)
1 large white onion
32 oz broth
1 14 oz can of coconut milk (full fat)
1 tbsp crushed red pepper flakes
1 tbsp artisan salt (or to taste)
3-4 medium sized red potatoes
2 heaping handfuls of chopped kale

In a large soup style pan, brown the italian turkey sausage.
While that’s happening, chop your large onion.
Once the sausage is cooked through, add the onion and saute that for about five minutes (don’t drain any juices out!)
While the onion is browning, chop up those potatoes.
Add the chicken broth, coconut milk, crushed red pepper, and artisan salt.
Bring the temperature up to a slow boil, add the potatoes, and mix it all up.
Cook on a low boil for about fifteen minutes, or until the potatoes are done to your liking.
Add the kale, and let that cook down for about five to ten minutes, stirring every now and then.
Serve into bowls, careful, it’s HOT!

This makes about six servings. ENJOY!!!
