How to Roast Squash!

I’ve only been cooking with squash for a few years. It just wasn’t one of those things I ate growing up. I would walk by them in the store, and just wonder, what the heck do you do with that thing?!?

Well, I figured it out. It’s way easier than I thought too!

Pre-heat oven to 375 degrees.
Place a piece of foil on a baking sheet (the squash will drip a bit)
Poke several holes all over the squash with a fork.
Place squash on the foil.
Cook for 55-75 minutes, flipping half way through. The skin will be light brown.
When it’s done, let the squash cool for an hour or two. It’s super HOT!
Once it’s cooled, cut the squash in half, and scoop out the seeds with a spoon.
Now your squash (and seeds) are ready for whatever dish you like!

I try to make more than one at a time, it’s nice to have them cooked and ready to throw in a recipe!
