Healthy Mashed Potatoes!

Mashed potatoes are a staple in my house. I usually make them about once a week, and love eating them post workout. Something about warm mashed potatoes always reminds me of fall, and of course Thanksgiving. I’ve made them enough to get used to eating them without a lot of fanciness. They actually taste like potatoes, and they’re yummy! Go figure.

4-5 medium sized potatoes (any kind you like)
1 cup-ish almond milk (depending on how creamy you like them)
salt and pepper to taste

Fill a large pot half full with water, and heat on the stove on high.
Chop your potatoes into cubes and place them in the water (leave the skin on).
Boil for 15-20 minutes, or until the potatoes are fork tender.
Drain the water.
Turn the heat to low, and place the pot of drained potatoes back on the stove.
Add almond milk, salt, and pepper, and mash until they turn into, well, mashed potatoes.

Serves 6-8. ENJOY!!!
