|1 medium sized banana
1 large egg
1 tsp vanilla
1 tsp cinnamon
1 tbsp protein powder (optional, it makes the pancakes thicker)
1 tbsp coconut oil
Warm your coconut oil in a saute pan on medium heat.

I overcooked mine a little! WHOOPSIE! They were still delicious! This batch had the protein in it. They are a bit runnier without the protein powder, and may need longer to cook, but they’re good that way too. Above are three ways to eat these: plain, with almond butter, or peanut butter with blueberries! These are also yummy chilled and eaten as a snack before a workout.
