Banana Pancakes!

If you’re ready to fall in love with a new breakfast idea, keep reading! I’ve shared this recipe with MANY people, and they all LOVE it. I’ll believe all the reviewers, they’re great people!

1 medium sized banana
1 large egg
1 tsp vanilla
1 tsp cinnamon
1 tbsp protein powder (optional, it makes the pancakes thicker)
1 tbsp coconut oil

Warm your coconut oil in a saute pan on medium heat.
Smash the banana in a bowl until it’s a lumpy paste.
Add the egg, vanilla, cinnamon, and protein powder and mix until it looks like pancake batter.
Pour the batter onto your sauce pan in pancake sized circles. This make 2-4, depending how big you make them.
Cook for about 5-6 minutes, or until you start to see little bubbles forming.
Flip those beauties over, and cook for another 5-6 minutes.
This makes enough for one person, but feel free to bulk the ingredients up to make more!

Banana Pancakes

I overcooked mine a little! WHOOPSIE! They were still delicious! This batch had the protein in it. They are a bit runnier without the protein powder, and may need longer to cook, but they’re good that way too. Above are three ways to eat these: plain, with almond butter, or peanut butter with blueberries! These are also yummy chilled and eaten as a snack before a workout.
