I was staring at the salmon in my fridge, trying to figure out how to prepare it, then it hit me! I’ll chop up a bunch of veggies and toss them in balsamic vinegar and bake it on the salmon! I feel like that makes me smart. 🙂
|1 tbsp coconut oil
1 finely minced small onion
3 finely minced large mushrooms
5 finely minced garlic cloves
1/4 cup balsamic vinegar
5 salmon fillets (4-6 oz each)
Pre-heat your oven to 375 degrees.
Serves five. ENJOY!!!
The salmon was really moist, and the flavors blended really well! I was pretty proud of myself with this concoction!
