Balsamic Baked Salmon!

I was staring at the salmon in my fridge, trying to figure out how to prepare it, then it hit me! I’ll chop up a bunch of veggies and toss them in balsamic vinegar and bake it on the salmon! I feel like that makes me smart. 🙂

1 tbsp coconut oil
1 finely minced small onion
3 finely minced large mushrooms
5 finely minced garlic cloves
1/4 cup balsamic vinegar
5 salmon fillets (4-6 oz each)

Pre-heat your oven to 375 degrees.
Warm the coconut oil in a skillet.
Add the onion, mushroom, and garlic, then saute for a couple of minutes.
Add the balsamic vinegar to the skillet and continue to stir for a minute or two.
Place the salmon in a 9″ X 13″ pan (no need to grease the pan).
Evenly top the salmon with the balsamic and veggie mix.
Bake for 25-30 minutes, depending how well done you like your fish.
